Pazzo is the newest and largest opening from the Bianchis Group -- the same family business behind Pasta Ripiena above, run by cousins Dominic Borel and Ben and Joe Harvey. This research pass resolved the address the existing research had flagged as unconfirmed: Pazzo occupies 89 Whiteladies Road, in a basement space that spent the previous two decades as Bar Humbug, and is described by Bristol24/7's review as "replacing Pasta Loco round the corner" -- a nearby, not literal, successor to the group's original site, distinct from the actual former Pasta Loco unit on Cotham Hill (now Mangosteen, see that row above).
Where Pasta Ripiena stays close to simple, contemporary Italian, Pazzo opens the menu out further: curried goat tortellini and sea bass ceviche sit alongside more familiar plates, described in early reviews as a genuinely ambitious step up for the group rather than a straightforward expansion of the existing format. The room itself is a "Tardis-like" basement with an open kitchen visible from some tables -- reviewers call it one of the most exciting new openings in Bristol, 4.4 on TripAdvisor, with attentive, knowledgeable staff, alongside occasional notes of small portions or an off dish on a given night, which reads as a young kitchen still settling rather than a structural problem.
The same honest caveat applies here as to every other Bianchis Group name on this list: this is group ownership, not a single founder-run site, and it is explicitly the group's flagship, largest, highest-profile venture -- the furthest from "hungry for bookings" of anything on this shortlist. Being the newest opening (2023) does put it inside the brief's age window, but a buzzy flagship launch is a different profile from the quieter, still-finding-its-feet independents elsewhere on this list.
