Condesa is the newest of the three Season + Taste sites on this shortlist (alongside Bravas and Gambas, all founded by Kieran and Imogen Waite), opened over the Easter weekend of 2024 in a candlelit basement at 83 Whiteladies Road that was previously Burger Joint -- exposed brick, church candles, a "mezcal cave" stocked from research trips to Mexico the Waites have made since 2007. Head chef Sean Martin moved over from the group's Cargo Cantina to lead the kitchen, cooking a small-plates Mexican menu built around charcoal and fire: tostadas, hispi cabbage, carne asada tacos, priced £5.50-£14 a plate.
On age alone Condesa sits inside the brief's "1 to 4 years old" window, and a 2024 opening on a competitive Whiteladies Road strip is a genuine still-building-its-reputation story rather than an established room. But it carries the same ownership caveat as Gambas and Bravas below: this is a Season + Taste group site, not a single founder-run business, even though the Waites themselves are the real, hands-on founders behind all three. A more pointed concern surfaced in this pass and is worth stating plainly: a Bristol Sauce review from shortly after opening described genuine teething problems -- slow food and drink service, and a table pressured to turn over after just 15 minutes despite a longer wait. That reads as early-days strain in a brand-new kitchen under pressure, not necessarily where the restaurant has settled a year on, but worth checking against a more recent review before committing.
The restaurant explicitly welcomes group bookings and private hire (by phone or email, not self-serve online), and trades non-stop Monday to Saturday 11:30am-11pm with the kitchen closing at 10pm -- open both Monday and Tuesday, a real early-week fit. Whiteladies Road is one of Bristol's busiest independent-restaurant strips, more see-and-be-seen than Redland or Westbury Park, and a Mexican-inspired small-plates format suits a shared, conversational table well if the service concern above has settled since opening.
