Bravas is Kieran and Imogen Waite's original restaurant on Cotham Hill -- the site that grew out of an at-home Spanish supper club the couple ran themselves before opening as a bricks-and-mortar tapas bar, and the founding site of what later became the wider Season + Taste group (also home to Gambas and Condesa on this shortlist). One long-time reviewer describes "a regular pilgrimage for the last seven years," real, well-tested longevity behind a small, deliberately unpretentious room: a cramped, dim-lit bar with pop music, a plum front window, and an open-air pedestrianised-street section out front.
The food is classic Andalusian tapas done with real care -- tortilla, boquerones, patatas bravas alongside daily-changing specials -- and staff reportedly still make research trips to Spain to source suppliers, a level of ongoing curiosity that reads as a kitchen still actively caring rather than coasting on a founding idea. It is genuinely founder-owned in the sense that matters most (the Waites still run it), though the group-ownership caveat that applies to Gambas and Condesa applies here too, softened by Bravas being the original site rather than a later group expansion.
The real structural mismatch for this brief is scale and booking model rather than ownership. Bravas' own site describes deliberately keeping "plenty of seats for walk-ins," including the window table and the alfresco spots -- a small, informal room built around spontaneous footfall on a pedestrianised street, not a restaurant designed around blocking out 10 covers for a private booking. No group-booking policy or minimum-spend information is published anywhere on the site, itself a signal: this is not a venue that has built infrastructure around private dinners the way Root or Bosco have. Trading Monday to Saturday, 11:30am-11pm, it is open both target early-week nights, but reserving a full table of 10 in a genuinely small, walk-in-heavy room would need a direct conversation, and possibly some compromise on the atmosphere the room is actually built for.
